Let me just go ahead and disclose that this soup is bursting with flavor! It’s got a little kick to it, but it’s not what I would call “spicy.” I love a good chicken noodle soup, but this one is special because it has an Asian kick! The key to bringing out the flavor in this soup is to marinate your chicken with Chinese Five Spice blend. For this recipe, you will use boneless skinless chicken thighs and marinate the chicken for 24 hours in Chinese Five Spice. The seasoning used in this recipe to marinate the chicken is what gives this soup that Asian pop!
I use Mei Fun noodles in this soup. They are gluten free and hold up really well in the soup! A lot of rice noodles I’ve used in the past fall apart so easily in pasta dishes and soups, but these hold amazingly well!
