One of the best things during the cold weather is wrapping yourself in a cozy blanket and getting a bowl of hot soup to keep you warm! Generally, we don’t invest much time preparing soup and we tend to end up with that same ol’ chicken noodle soup recipe. Usually from a can.

Baked Potato

Baked potato soup has become very popular since it can be made with dinner leftovers (and it’s delicious!). It’s easy and quick to make - it’ll be ready in about 30 minutes. In addition, you can also add chopped bacon for extra flavor!
Chicken and Barley

Barley is a great choice for soups, that’s a sure thing in life! This chicken and barley option is really good because you cook the chicken in three parts which gives it such an amazing taste...dreamy! Winter is a whole lot better when you have a bowl of this soup during the week.
Italian Sausage and Kale

Have you ever tried Italian sausage with kale? Well, this is definitely your best choice to give it a go! Aside from those two, this soup is made with beans as well, which makes it super hearty and deliciousl!
You’ll need:
- Italian sausages
- Onion
- Fresh kale
- Garlic cloves
- Red pepper flakes
- Chicken stock
- White wine (if you don’t have wine, you can replace it with more chicken stock)
- White beans
- Diced tomatoes
- Sun-dried tomatoes
- Pepper
Sound like a lot? Don’t worry, it’s super easy to make and it’ll be ready in about 40 minutes!
Broccoli Cheese

I love soups that are creamy, so recipes that have cheese are always my favorites. And lately, I’ve been eating a lot of broccoli, so you can image how glad I was to have discovered this recipe!
It’s really easy too:
While the broccoli florets are baking, the broth is being cooked. Once the broth gets to the right consistency, it’s time to add the broccoli, a couple of seasonings, and let it simmer on low heat until the broccoli is tender. After that, add the cheese, allow it to melt, and then turn off the heat and enjoy!
Chickpea Quinoa Tortilla

If you came here looking for easy, this chickpea and quinoa is where you’ll find it! More than that, it’s one of the healthy winter soups we all love so much!
This is how to do it:
- Heat 3 tablespoons olive oil over medium-high heat.
- Add and cook, stirring until soft:
- 1 chopped red onion
- 3 chopped cloves of garlic
- ½ tablespoon salt
- ½ tablespoon pepper
- Add and reduce heat to simmer (until quinoa is tender):
- 8 cups vegetable broth
- 1 cup red quinoa
- Add and cook until vegetables are warm:
- 2 15.5-ounce cans chickpeas
- 1 cup corn
- 3 chopped tomatoes
- Lastly, serve with cilantro and cheddar on top for extra flavor!
Winter Country

Winter Country soup is very similar to Italian sausage and kale, after all both are made with sausage, kale, and beans.
The difference is:
Winter country isn’t made with tomatoes, it’s spicier, and it has pasta in it! Even though I find both recipes delicious, I have a tendency to like soups with pasta a tiny bit more.
Beef and Barley

slow-cooker recipe is perfect if you love a chunky soup! We’ve talked about barley before, but this time it’s combined with beef - some people prefer it over chicken. Even though I’m not one of those people, I find this recipe so yummy and it’s good to eat something different every now and then!
Spicy Tomato

Soups are already made to keep us warm during chilly nights, but they’re even more efficient when super spicy - such as this quick and spicy tomato soup! It takes about 20 minutes to prepare, and it has the advantage of being a one-pot recipe. Enjoy!
Creamy Carrot with Ranch Whipped Cream

We couldn’t go through a list of best winter soups and not have one made from carrots! And this recipe even has the special final touch of a ranch whipped cream - very unique stuff. If I were you, I’d be going to the grocery store and getting started on my soup right away!
